A Food Service Establishment Floor Plan Review Checklist (4 pages) is required for all new food service establishments, existing structures that are converted into food establishments, and remodeled food service establishments. The review process is to help with the design and construction of food service establishments and ensure that the specific requirements of NH Administrative Rules for the sanitary production and distribution of food are met. The checklist outlines the requirements of a floor plan with regards to the layout of the establishment, adequate food storage, refrigeration and sinks.
These requirements include but are not limited to:

the amount of food preparation and storage space; -
the size of refrigerators and sinks; and -
the arrangement of equipment.
Two copies of the floor plan and a review fee of $25.00 are to be submitted 45 days before construction is started. |
