Anyone who owns or operates a shellfish processing plant or vehicle for transporting shellfish in NH must obtain a shellfish certificate from the Food Protection Program prior to operation. In order to be eligible to obtain a shellfish certificate a person or corporation must meet the requirements below.

The shellfish processing plant or vehicle owned or operated by the prospective certificate holder must meet the requirements of NH Statutes.

The prospective certificate holder must complete and submit an application to the Food Protection Program for a shellfish certificate.
Hazard Analysis Critical Control Point (HACCP)
The prospective certificate holder must develop and maintain a Hazard Analysis Critical Control Point (HACCP) plan for each type of shellfish that will be sold by the dealer.
Compliance Inspections
The Food Protection Program will conduct an on-site inspection of the plant or vehicle, as well as the HACCP plan. If satisfied that the information regarding the applicant, the HACCP plan and the applicant's operation and facilities are in compliance with the NH Shellfish Sanitation Rules, a shellfish certificate will be issued, which will expire on December 31st of that year.
